Summer Peach, Cucumber & Goat's Cheese Salad ๐

Chicken
- 4 boneless skinless chicken thighs (~500g)
- 2 tbsp olive oil
- 1 lemon, juiced
- 2 garlic cloves, minced
- 1 tsp dried oregano
- Salt and black pepper
Pearl Couscous
- 125-150g pearl couscous
- 1 cup (250ml) chicken or vegetable stock
- 1 tbsp olive oil
- Salt and pepper
Salad
- 3 large ripe peaches, sliced
- 1 Lebanese cucumber, sliced
- 100-150g soft goat's cheese or feta
- Small handful fresh mint, torn
- 1-2 tbsp extra virgin olive oil
- 1-2 tsp lemon juice
- Black pepper
Ingredients
Method
Mix olive oil, lemon juice, garlic, oregano, salt and pepper in a bowl. Coat the chicken thighs and marinate for 20-60 minutes.
Optional: toast the pearl couscous in a dry pan for 2-3 minutes until lightly golden. Add stock and bring to the boil, then reduce to a simmer for 8-10 minutes until tender. Drain if needed, stir through olive oil and season. Cover and set aside.
Heat a pan on medium-high. Cook chicken 5-7 minutes per side until golden and cooked through. Rest for 5 minutes then slice.
Arrange peach slices and cucumber on a serving plate or bowl. Crumble goat's cheese over the top, drizzle with olive oil and lemon juice, and finish with torn mint and black pepper.
Spoon couscous onto each plate, top with sliced chicken and add a generous pile of the peach salad alongside. Finish with an extra drizzle of olive oil if desired.
๐ฅ Hot Tips
Rest the chicken for 5 minutes before slicing. It makes a big difference to how juicy it stays.
The longer you marinate the better. Even 10 minutes helps but 60 is ideal.
No goat's cheese? Feta works just as well.
