Healthy Crispy Beef Tacos

Beef Taco Mix
- 500g beef mince
- 1 small brown onion, finely diced
- 2 garlic cloves, minced
- 1 taco seasoning packet (30-40g)
- 2 tbsp tomato paste
- ½ cup beef stock
- ½ can refried or black beans
- 12 corn tortillas (approx. 300g)
- 1 cup shredded Mexican cheese
- 2-3 tbsp olive oil
- Salt and pepper to taste
Fresh Salsa 🥑🍅
- 1 avocado
- 2 tomatoes, diced
- ½ small red onion, finely diced
- 1 handful coriander, chopped
- 1 lime, juiced
- 1 tbsp olive oil
- 1 tsp garlic (optional)
Toppings
- Shredded lettuce
- Sour cream
- Fresh coriander, chopped
- Lime wedges
- Hot sauce (optional)
Ingredients
Method
Heat olive oil in a large pan over medium-high heat. Add diced onion and cook for 2-3 minutes until softened. Add minced garlic and cook for another 30 seconds until fragrant.
Add beef mince and break it up with a spoon. Cook until browned all over, about 4-5 minutes. Drain any excess fat if needed.
Add taco seasoning, tomato paste and beef stock. Stir to combine and simmer for 3-5 minutes until the mixture thickens and the liquid reduces.
Stir in the refried or black beans. Remove from heat and allow to cool slightly before filling the tortillas.
Spoon the beef mixture into the centre of each corn tortilla and top with a little Mexican cheese. Don't overfill — about 2 tablespoons of filling per tortilla works well. Fold the tortilla closed.
Heat a thin layer of olive oil in a clean pan over medium-high heat. Cook the filled tortillas for 1-2 minutes each side until golden and crispy.
Serve immediately topped with shredded lettuce, fresh salsa, sour cream, chopped coriander and a squeeze of lime.
Fresh Salsa
Scoop avocado flesh into a bowl and roughly smash with a fork — keep it a little chunky.
Add diced tomatoes, finely diced red onion, chopped coriander, lime juice and olive oil. Mix gently.
Season with salt and pepper to taste. Set aside until ready to serve.
