Healthy Beef Ho Fun (Beef Chow Fun)

Beef

  • 250g rump, sirloin or flank steak — trim off excess fat, then slice very thinly against the grain, about 2–3mm thick

Marinade

  • 2 tsp light soy sauce
  • 2 tsp oyster sauce
  • ¾ tsp sesame oil
  • ¾ tsp cornflour
  • ¼ tsp white pepper
  • ⅓ tsp baking soda (optional)

Noodles

  • 300g fresh flat rice noodles (ho fun)

Vegetables

  • ½ large brown onion, sliced into thin 3–4mm strips
  • ½ large red capsicum, sliced into 3–4mm strips
  • ½–¾ medium carrot, julienned into thin 3mm matchsticks
  • 100g Chinese broccoli (gai lan) — stems sliced 2–3mm diagonally, leaves roughly chopped
  • 2 spring onions, cut into 5cm pieces
  • 75g bean sprouts
  • 1 clove garlic, minced
  • ½ tbsp fresh ginger, finely sliced into 1–2mm slivers

Sauce

  • 1½ tbsp light soy sauce
  • 2 tsp dark soy sauce
  • 1½ tbsp oyster sauce
  • ¾ tsp sugar
  • 2 tsp Shaoxing wine
  • ¾ tsp sesame oil
  • ¼ tsp white pepper
  • ¼ tsp MSG (optional — adds extra savouriness, fine to leave out)

Method

  1. Marinate the beef for minimum 20–30 minutes to tenderise it before cooking.

  2. Mix the sauce ingredients together in a small bowl while the beef marinates.

  3. Get your wok very hot, add oil, then sear the beef for 60–90 seconds until browned. Remove and set aside.

  4. Stir-fry the onion, carrot and Chinese broccoli stems for about 2 minutes.

  5. Add the capsicum, garlic and ginger and stir-fry for another minute, until fragrant.

  6. Add the Chinese broccoli leaves and cook briefly, just until wilted.

  7. Add the noodles and let them sit against the wok for a few seconds at a time before tossing, to build some char.

  8. Pour in the sauce and toss gently to coat everything evenly.

  9. Return the beef, then add the spring onions and bean sprouts. Toss for 1–2 minutes and serve immediately.

🔥 Hot Tips

  • Keep the wok hot: cook only 2 servings at a time, or it loses heat and steams instead of stir-frying.

  • Making more? Double the recipe, but still cook it in 2 separate batches for the same reason.

  • Fresh ho fun noodles often stick together in the packet. Gently pull them apart by hand before cooking.

  • You can buy fresh flat rice noodles from any Asian grocery store, usually in the fridge section near the tofu.

  • Add a drizzle of chilli oil at the end for extra spice, if you like it hot.
